New this summer are our Brown Box Specials. Our signature gift box is a 2 pc Chocolate Brown and Creamy Vanilla box that looks so nice with almost any color ribbon or raffia. It's also a sturdy box so the cookies and brownies inside ship well whether shippng locally in Pennsylvania or across the country.

We use pastry bags to do our outlining and plastic bottles with tips for flooding. The spring colors are gorgeous from deep pink to fuschia to lemon yellow. A great addition to our Mother's Day cookie gifts this year!

We're decorating Daisy cookies for Mother's Day shipping next week. Cookies are baked and ready to be iced. Outlining with royal icing using a # 3 tip is next, followed by flooding with a thinner icing.

We're working on a line of daisy cookies Yellow white and pink for the warmer weather coming our way! They will be available for Mother's Day also as part of a cookie gift for Mom. Our decorated cookies are growing slowly but we love their whimsical look and they really taste great!

We're starting with seasonal cookies, baby shower cookies and birthday custom cookies for parties, etc. These onesie cookies would make great baby shower favors, more coming soon. So far, so cute.

Buttery Rich Shortbread Cookies Gifts

Shortbread cookies are becoming a favorite of mine. A simpler cookie, bite-sized and so easy to make. I guess I love butter, ( I did grow up on a farm where I remember making butter, although I think that was a one time deal, but we did have cows on the farm when I was very young...) and combined with sugar well, they melt in your mouth. Also, I like shortbread for the wonderful way it combines with other flavors like pure vanilla or Dutch cocoa. We are currently updating our shortbread cookie line, adding new packaging and some better photos online. Just in time for Mother's Day!

Super Chunky Cookies

I'll admit that I'm somewhat obsessed with baking chocolate chip cookies. I enjoy baking them and tweaking the recipe even more than eating them. Well, I spent a few hours yesterday trying to create a thicker, chunkier, bigger chocolate chip cookie that would also remain moist. In the past, adding extra unbleached flour would create a larger chunkier cookie, but at the expense of losing that melt-in-your mouth center. Well, I won't say this one is perfect because that can really never happen when you're talking about chocolate chip cookies, but I have to say that this cookie is absolutely wonderful. The trick is that there is no one trick. I increased the brown sugar, increased the unbleached flour, kept the butter cold, tweaked the baking soda and baking powder, chilled the dough, increased the oven temperature in our convection oven, and Hand scooped the cookies. Yes, no scoop would work with these cookies. They must be hand formed to keep the dough light, any machine or scoop would compress the dough too much. The cookies, that we are offering now at Country Cupboard Cookies online are 4-5 ounces each. They are at least an inch thick and between 3-4 inches in diameter. ( Twice as large as our regular cookies) But it's the texture that makes them such a treat. Buttery rich yet, somewhat airy in the middle. Somehow they are not dense, but chewy and loaded with chocolate. They are not your ordinary chocolate chip cookie. I'm very happy with the recipe! Now to work on a double chocolate version.

Buttery Rich Shortbread Cookies

Shortbread cookies are so simply made with butter, sugar, vanilla, egg and flour but the flavor is so wonderful and the texture is perfectly crisp yet delicate. All butter shortbread with just a touch of pure vanilla is my favorite. I really have to be careful, because they are bite-size, it's easy to eat more than I need. We are working now on improving our line of shortbread cookies, we offer 4 flavors now, Original Butter, Cinnamon & Sugar, Belgian Chocolate and mini-Chocolate chip. We hope to be able to offer different shapes by this summer, a star, square and maybe a fluted square.
